I do love giving presents....and I even more love baking!! Last night I made snacks to hand out to my staff with their Christmas cards. I made these great oyster crackers and puppy chow. Then I put them in the clear bags and tied on pretty Christmas bows. I LOVE how they turned out! Here are the recipes -- we used to make these oyster cracker ever Christmas and I LOVE them!
Oyster Crackers
2 (12 oz) pkgs of oyster crackers
1/2 cup oil
2 1/2 tsp dill weed
1 1/2 tsp lemon pepper
1/2 tsp onion powder
1/2 tsp garlic powder
1 package hidden valley ranch dressing (dry mix)
Mix together all ingredients besides oyster crackers. Drizzle over crackers (or Karen's way of put in tupperware, pour over, close the lid and shake till coated!). Put on large cookie sheet and bake at 250 degrees for 30 minutes, turning at 15 minutes. Store in airtight container.
And then my ultimate favorite...we call it puppy chow - no idea why, but when I make it, I want to eat all of it. Go figure.
Puppy Chow
9 cups of Crispix cereal (can use Chex Mix)
1 cup semisweet chocolate chips
1/2 cup peanut butter
1/4 cup butter or margarine
1 tsp vanilla
1 1/2 cups powdered sugar (may need more!)
In 1 quart microwaveable bowl, microwave chocolate chips, peanut butter and butter uncovered on high 1 minute, stir. Microwave another 30 secons longer or until mixture turns smooth when stirred. Stir in vanilla. Pour mixture over cereal, stirring until evenly coated. (or once again, the Karen method of putting in big tupperware container and shaking until coated!) Pour into 2 gallon bag and add powdered sugar. Shake until well coated. Store in airtight container.
